Abrikozen cashew energierepen/ Apricot cashew energy bars Morgen begint de werkweek weer, en dan heb ik dus weer iets nodig om als snack mee te nemen(naast die fruitmand die standaard mee naar het werk gaat iedere week.) Vandaag een lekkere fris smakende abrikozen reep met zaden, cashewnoten en havermout. Heel snel en makkelijk te maken, alleen even fijnmalen, aandrukken en koelen. Makkelijker dan een trip naar de supermarkt! En boordevol gezonde bouwstoffen die je lekker lang energie geven zonder de bekende suikerdip. Wat wil je nog meer? Laat die maandag maar komen!

Wat heb je nodig: 150 gram gedroogde abrikozen 75 gram rauwe cashewnoten 100 gram geraspte kokos (ik heb 75 gram gemengde zaden gebruikt) 30 gram havermout 30 gram honing 15 gram kokosolie 20 gram hennepzaad of chia zaad Snufje zout

Hoe maak je het: Bekleed een bakvorm van 10x20 cm met bakpapier Maal de abrikozen, cashews, havermout en kokos of zaadjes fijn in een foodprocessor. (ik heb voor zaadjes gekozen (pompoen, zonnebloem, sesam en lijnzaad) omdat ik niet van gedroogde kokos houd. Doe alles in een grote kom en voeg de honing, kokosolie, hennep of chia zaadjes en zout toe. Kneed alles goed door tot je een samenhangend deeg-achtig geheel hebt.

Doe het mengsel in het bakblik en druk goed aan. Dek af met bakapier of folie en zet de vorm een paar uur in de koelkast. Snijd de koek in 5-8 repen en verpak in een luchtdichte container. Bewaar in de koelkast.

Apricot cashew energy bars Tomorrow is another week at work, so I need another recipe for a bring-along snack. (Besides the hugh basket of fruit I bring every week). So today I made this very fresh flavored apricot energy bars with cashew nuts and seeds. (Originally the recipe was made with shredded coconut, but I don’t like coconut, so I chose assorted seeds like pumpkin, sunflower, sesame and flaxseed. It is real easy to make, just grind, press and cool. Faster than a trip to your local supermarket to buy packed energy bars. And these home-made beauties contain a ton of healthy nutrients that will keep you full without the well-known sugar dip after eating. What more could you wish for? Bring on that Monday morning!

What do you need: 150 gram dried apricots 75 gram raw cashews 100 gram shredded coconut (I used 75 gram mixed seeds) 30 gram oats 30 gram honey 15 gram coconut oil 20 gram hemp seed or chia seeds Pinch of salt

How to make it: Line an 8 inch baking tray with parchment paper Pulse the apricots, cashews, oats and seeds or coconut in a food processor until fine crumbs. Pour in a large bowl and add the honey, coconut oil, salt and hemp seeds or chia seeds. Press down very hard until firm and cover with baking parchment or film. Place in the refrigerator for a few hours until firm and cut into 5-8 pieces. Pack each bar individually and keep in the fridge until use.
