• 4 rotoli di pasta sfoglia rettangolare • 300 g di patate • 150 g di speck a fettine

Lessate le patate in acqua bollente salata. Rassodate le uova. Tagliate lo speck a listarelle e rosolatele in una padella antiaderente, senza condimento, per renderle croccanti. Sbucciate le patate e passatele allo schiacciapatate. Mescolatele in una ciotola con lo speck e regolate di sale e pepe. +1 RIGA

Sgusciate e tritate grossolanamente le uova insieme al prosciutto e insaporite con poco sale e pepe. Se i due composti risultano asciutti, ammorbiditeli con poco olio.

Ricavate dalla sfoglia 16 strisce di 10x20 cm. Dividetevi le due farce disponendole a triangolo su uno dei lati corti.

Dal lato opposto praticate dei forellini o dei taglietti, a seconda del ripieno, per identificarli una volta cotti.

Ripiegate le strisce su se stesse a triangolo, sigillando i bordi con poco olio. Disponete i fagottini su una teglia coperta di carta da forno e cuoceteli in forno ventilato a 200° per 10 minuti.

• 400 g di farina, più quella per la lavorazione • 250 g di emmentaler • olio extravergine d’oliva, sale

• 3 carote • 1 peperone • 3 zucchine medie • 1 pizzico di bicarbonato

Disponete la farina a fontana sul piano di lavoro. Unitevi il bicarbonato e 1 pizzico di sale, poi versate al centro 0,75 dl di olio e 1,25 dl di acqua tiepida. Impastate a lungo fino a ottenere un composto liscio.
